1.  It ain’t over till the fat lady sings means the outcome of a situation is not assured until the end; one cannot know what the outcome of a situation will be while the situation is still in progress.

The fat lady referred to in the term is a metaphorical opera singer, similar to the character of Brünnhilde in the Wagner operas, who sang at the end of the opera.  (from grammarist .com)

2. Politically correct is defined as: conforming to a belief that language and practices which could offend political sensibilities (as in matters of sex or race) should be eliminated (from Merriam-Webster Dictionary)

3. Society has become so politically correct that innocent statements people make cause them to be publicly criticized and/or condemned for being “insensitive” “sexist” “racist” or whatever. This trend has become so prevalent that people are afraid to make any type of observation or comment on anything that is not “in line” with the politically correct.
